Brunchtime!

Hi all. Just relaxin' and scoping out new recipes this Sunday morning. Working a lot. School is stalled because I didn't finish my IN from last semester. Oh well. I guess I'll have to enjoy Christmas this year. In any case, I wanted to post a new recipe. Baked Meaty Veggie Eggs. All that's missing is some fruit and nice buttery toasted bread.

Bacon, spinach, peas, 2 eggs , shredded cheese, chopped tomato, Old Bay seasoning mix

Turn oven to 350. Grease a oven-proof dish. (I use my vintage Pyrex small casserole looking plate. It's about 7" across, with a slight handle on one side.) Fry bacon until super crispy. Drain on paper towels. Put spinach in frying pan to cook (fresh) or dry out (frozen). (You could add some onions here too, but I forgot.) Put spinach on the bottom of the greasesd dish, throw some peas on top, crack open the eggs on top of this, without breaking the yolk, throw some cheese on top and crumbled bacon. Last, sprinkle spice mix on top, liberally. Bake in a water bath until the yolks are how you like them. 15 minutes will probably be hard-set. Put tomatoes on top before serving. Enjoy.
